Merle Ernest Schimek, age 81, of Easton, MN, died Saturday, April 21, 2018 at Regency Hospital in Golden Valley, MN. A Mass of Christian Burial will be held Friday, April 27, 2018 at 10:30 AM at Our Lady of Mount Carmel Catholic Church in Easton, MN, with Father Jason Kern and Deacon Gene Paul officiating. Visitation will be from 9:00 AM -10:30 AM prior to the service at the church. Interment will be at Our Lady of Mount Carmel Cemetery in Easton, MN. Merle Ernest was born October 22, 1936 in Barber Twp., Faribault Co., MN, the son of Ernest and Florence (Stevermer) Schimek. He graduated from Delavan High School. Merle married Alice Marsh on September 17, 1964 at Our Lady of Mount Carmel Church in Easton. He was a lifelong farmer having milked Holstein cows for many years. Merle lived his entire life on the family farm. Merle also worked at the Easton Elevator for several years, and was a seasonal employee at the canning factory in Bricelyn. He enjoyed being outside and mowed the church cemetery for many years. Merle also enjoyed playing cards and was a faithful member of OLMC in Easton.
Merle is preceded in death by his parents; brother in law: Fritz Wolff.
He is survived by his wife, Alice of Easton, MN; sons: Paul (Dorene) Schimek of Le Mars, IA, Christian Schimek of Lexington Park, MD, Jeffrey Schimek of North Mankato, MN; grandchildren: Anthony Schimek (special friend Szumei Leow) of Indianapolis, IN, Justina Schimek of Fort Worth, TX, Nicole Schimek of Le Mars, IA, and Kyleigh and Kolby Schimek of North Mankato, MN; sister: Dolores Wolff of Winnebago, MN; brother-in-law: Ronald Marsh of Delavan, MN; several nieces, nephews and their families.
